Flavor Profile
Republique Cabernet Sauvignon is proof of what savvy Cab fans have discovered: Paso Robles is “one of the most dynamic wine regions in California,” says Wine Spectator. Richly fruited and layered with oaky nuances, it’s one of the many terrific value bottles among the sea of leading, premium estates that populates the area.
Crafted by veteran winemaker Clay Brock using grapes from top vineyards across the rolling hills of Paso Robles, it’s already drinking deliciously and will gain further complexity with a few years in the cellar.
Deeply colored, it wafts heady aromas of black currant, plum and toasted tobacco leaf with hints of toasty spice imparted from oak aging. On the palate, it showcases Paso Robles’s classic, intense character and fresh zip, hemmed in by velvety tannins that leave an all-over round impression.
République is fantastic with braised short ribs, strip steaks or vegetarian chili and is also smooth enough to enjoy on its own.Word to the wise: previous vintages of République have sold very quickly. Secure your share of the latest release now.
