To make the wine, she selected beautifully ripe grapes from a vineyard overlooking the river Tarn, where the waters’ moderating influence helps grapes retain freshness and the sunny Mediterranean climate encouraged intense fruit flavor. (Mireval means ‘one who overlooks the valley’ in the local Occitan dialect.)

Back in the winery, Nicole aged the Cab in oak for a full year, imparting toasty spice to the ripe cherry, blackberry and savory herb notes.
