Sacred among Native Americans prior to European settlement, this huge bird has been on the U.S. endangered species list since 1967. When thinking about a suitably big red with which to pay tribute, talented winemaker Trevor Sheehan knew it had to be Cabernet Sauvignon. He sourced grapes from his favorite vineyard sites, and thanks to the stellar 2018 vintage, he had his pick of premium fruit.
