Head winemaker Jo Nash sourced the fruit for Aquarius from prime-sited vineyards in Victoria, which The World Atlas of Wine calls “the most interesting, the most dynamic and certainly the most varied of Australia’s wine states.” This elegant white marries two varieties that are originally from France’s Rhône Valley, Marsanne and Viognier, both of which reach unparalleled ripeness in the brilliant Australian sunshine.
