Using grapes from up and down the ‘boot,’ he crafts an incredible diversity of red, white and pink wines for his widely popular Papavero range. But born and raised in Conegliano—a.k.a. Prosecco central—in northeast Italy, he takes special pride in his gently effervescent Il Papavero Prosecco. Sitting at the eastern edge of Conegliano Valdobbiadene Prosecco Superiore DOCG, Italy's premier sparkling wine region, Conegliano has earned a reputation for its seriously high class bubbles.
