Flavor Profile
Hervé Sabardeil’s Cabalié red is a sumptuous beauty from the sun-drenched vineyards of southern France that wins rave reviews from customers and critics alike. So as a special treat for all those devoted fans, he’s crafted this limited-edition ‘Cuvée Vieilles Vignes.’ And here’s a hint: you’re not going to want to miss it.
Like the regular Cabalié, it’s made in the opulent style of the local reds that bolstered Roman soldiers over 2,000 years ago. The big difference? Hand-harvested, super-concentrated Grenache and Carignan from extremely old vines (aka the ‘vieilles vignes,’ which are between 60 and 100 years of age). Hervé used his extensive knowledge of the local vineyards to select just the right grapes from the best sites – and his diligence really paid off, as you’ll taste.
Hervé’s Grenache-based reds exhibit such remarkable depth and complexity, they take top honors, year after year, at major wine competitions. This luxurious cuvée continues the tradition with a gold medal from Gilbert & Gaillard, France’s most prestigious wine guide. Judges loved its “nose of ripe forest fruits with a floral and spicy edge. Beautifully rounded palate with lots of gracious aromas, tannins nicely in place and freshness.”
Look forward to aromas and flavors of succulent red and black raspberry, black cherry, and black currant. It’s full-bodied and silky-smooth, with hints of chocolate and coffee framing the long, ripe finish. An ideal partner for roasted meats, hearty vegetarian stews, and more.
The only drawback to making wine from such old vines? They yield minuscule amounts of (flavor-packed) grapes, which means there is not a lot of this gem to go around. Get your orders in ASAP.
